By request, here’s a recipe I’m sure you will love! I love vegetables and I love being creative when cooking.


This is a dish that I created from scratch during a time when I was really working out and adjusting my eating habits. I wanted to increase my vegetable intake while decreasing the amount of meat that I was consuming in order to aid in weight loss. I came up with this easy to make recipe and have been making this dish ever since! It’s easy to make and is sure to be a hit! You won’t even miss the meat!  Enjoy!

Ingredients Needed:

Your vegetables of choice! There is no set vegetable for this recipe you can use whatever vegetables you like. I have listed some examples below of what to choose.

Frozen Spinach
Frozen Stir Fry Mix (Some mixtures include onions, red bell peppers, bamboo shoots, corn, broccoli, etc.,)
Frozen Broccoli
Frozen Corn
Frozen Sugar Snap Peas
1-2 small cans of mushrooms

Whatever you choose, you can mix or match or use one veggie alone. I personally love green vegetables, so I typically use frozen spinach with 1-2 cans of mushrooms, or spinach alone, or a frozen stir-fry mix alone.  The possibilities are endless and up to you! You can purchase frozen stir-fry mix from your local grocery store.

Remaining ingredients needed:

1lb of fettucine
2-3 Cups of Water
1-2 Teaspoons of EVOO-Extra Virgin Olive Oil
2 jars of Ragu Alfredo Sauce (Garlic Parmesan or Classic Alfredo)
Salt
Pepper
Oregano
Grated Parmesan Cheese (Kraft or Spartan Brand)
Garlic Bread or Bread Sticks

Directions

First in a large saucepan bring 2-3 cups of water to a boil.
Once the water is at a boiling point, add your fettucine to the water and let it cook until it is tender/done.

Next, while your fettucine is cooking, prepare your vegetables.
I personally like to saute my vegetables in EVOO, before adding them to the already prepared fettucine. You can lightly steam, boil, or saute your veggies, it’s up to you, either way is great! If you choose to saute your veggies, use the EVOO! It is way healthier than vegetable oil.

Once your vegetables are done, add them to your already prepared fettucine. Be sure to pour the water off of the fettucine before adding your vegetables. Add both cans of Ragu Alfredo Sauce to the mixture. Stir your vegetables and fettucine until all your fettucine and vegetables are coated. Season with Salt & Pepper. If you are an Oregano fan, season with Oregano too. Return the pot to the stove. Cook on medium heat while stirring, until the alfredo sauce is well heated throughout the dish. Let it cool.

Once the vegetable alfredo has cooled, you are now ready to serve it! Garnish it with grated parmesan cheese and serve with your choice of garlic bread or garlic sticks.  Delicioso!
